PLUM HAM SHANK WITH LARD

  • HAM SHANK
    2 PACKS
  • WHOLE PLUMS IN WINE
    400 g
  • EXTRAVIRGIN OLIVE OIL
    as required
  • HERBS
    as required
  • Lard or Bacon
    TO TASTE
How to prepare it
PREPARATION TIME: 25 minutes
1. Cut the lard into thin strips.
2. Use the strips to wrap the shanks.
3. Brown the meat in the oven at 220°C for 6 minutes.
4. Sauté the stoned plums on a high heat with the fat released from the lard.
5. Arrange the shanks on the serving dish accompanied by the plums.
