How to prepare it

  • Prepare a soffritto with the chopped onion and a drizzle of oil.
  • Toast the black rice, then cook it, gradually adding the broth like a risotto.
  • Once cooked, stir in the Parmesan cheese.
  • Prepare the sour cream by adding the lemon juice and zest to the cream.
  • Whip lightly with a whisk until you get a semi-whipped consistency.
  • Arrange the rice on a plate and season with the sour cream and strawberry pesto.
  • Garnish with lemon pearls and rocket salad.
