How to prepare it

- Prepare a soffritto with the chopped onion and a drizzle of oil.
- Toast the black rice, then cook it, gradually adding the broth like a risotto.
- Once cooked, stir in the Parmesan cheese.
- Prepare the sour cream by adding the lemon juice and zest to the cream.
- Whip lightly with a whisk until you get a semi-whipped consistency.
- Arrange the rice on a plate and season with the sour cream and strawberry pesto.
- Garnish with lemon pearls and rocket salad.
