Vegan meatballs with palm hearts and anchovy sauce

How to prepare it

  • Cut the palm hearts into strips, thinly slice the onion, and coarsely chop the olives. In a bowl, combine the breadcrumbs, flour, and the prepared ingredients. Add the parsley and salt, stirring until smooth.
  • Shape meatballs of the desired size and place them on a baking sheet. Bake at 180°C for about 35 minutes (time may vary depending on size).
  • Chop the palm hearts with the anchovy fillets, add extra virgin olive oil and lemon zest, then emulsify with a little water until you obtain a smooth cream.
  • Serve the meatballs with the anchovy and palm hearts sauce.
