- In a pan with a drizzle of oil, brown the sausage. Add the finely chopped broccoli rabe, season with salt and pepper, and cook for a few minutes.
- Stuff the chicken drumsticks with the sausage and broccoli mixture, close them with a toothpick and brush them with extra virgin olive oil.
- Bake the spindles in a preheated oven at 180°C for approximately 20 minutes.
- Dilute the brown stock in a large cup of water, bring to the boil and add the white roux until you get the desired consistency.
- Place a ladleful of demi-glace on each plate and top with a chicken drumstick.
- Serve hot.
