Fassona tartare with stracciatella sauce and truffle pearls, raspberry, chilli pepper and anchovy sauce

  • Stracciatella Cheese

  • Truffle Pearls

How to prepare it
1. Season the meat with salt, oil and pepper.

2. Use your hands to form the tartare with fassona beef tartare and place it on a backsplash. 

3. Blend the stracciatella with a mixer and with the help of a teaspoon pour a little of the mixture over the tartare.

4. Add a type of pearl (truffle, raspberry, chilli) to each tartare and complete the dish with a few drops of pesto with the help of a piping bag.
