1. Season the meat with salt, oil and pepper.
2. Use your hands to form the tartare with fassona beef tartare and place it on a backsplash.
3. Blend the stracciatella with a mixer and with the help of a teaspoon pour a little of the mixture over the tartare.
4. Add a type of pearl (truffle, raspberry, chilli) to each tartare and complete the dish with a few drops of pesto with the help of a piping bag.
