How to prepare it

  • Cover the potatoes with foil and bake them in the oven on coarse salt at 180°C for 40 minutes.
  • Peel, mash and mix them with flour, semolina, eggs, parmesan and spices.
  • Form 1.5 cm cylinders, cut them into pieces and cook them in salted water.
  • Cut the asparagus stalks into rounds and sauté them in a pan with a drizzle of oil, finally adding the asparagus sauce.
  • Stir the gnocchi into the sauce.
  • Separately, brown the crumbled sausage until crispy.
  • Plate the gnocchi with drops of fondue and sausage.
