1. Preheat the fan oven to 250 °C.
2. Place the bread in the oven at 210 °C for around 3 minutes.
3. Top each slice of toasted bread with the diced tomato, the anchovy fillets and the pesto sauce.
4. Drizzle with some extra virgin olive oil and decorate with a few drops of pesto sauce and sprigs of rosemary.
