1. Boil the rice in salted water for around 20 minutes.
2. Place the boiled rice in an oven dish covered by a layer of baking paper.
3. Bake at 105 °C for around 50 minutes.
4. Cut out 6 cm discs with a pastry cutter and leave to cool.
5. Slice the fassona beef fillet thinly. First cut the slices into strips and then into small cubes of roughly 0.5 cm in size.
6. Put the meat in a bowl and season with smoked salt, white pepper and extra virgin olive oil.
7. Place the meat mixture on the rice wafers.
8. Garnish with yellow pepper drops.
